If you have followed me for some time you know I LOVE tacos… really I love Mexican flavors - onions, peppers, jalapenos, tomatoes, avocados… Mmmm.
With the chilly temperatures and gray days I’ve been making more soups because they are easy, warm, and last many meals.
Yesterday I put together this delicious soup recipe for Garrett and I to enjoy.
Now I am sharing this recipe with y’all so you can make it too!
Mexican Chicken and Vegetable Soup
Rich delicious creamy and chocolatey… it’s got my name all over it!
So over the weekend I decided to give Black Bean Brownies a second chance… the first time I made them they were impressive that they didn’t take like beans and how easy they were to make but they weren’t as fudgy as I had wanted them to be.
Sure they were grain free and refined sugar free and dairy free… but they weren’t AMAZING.
Sunday I picked up three cans of black beans to restock my cabinet (we go through a lot of black beans in our house) and I decide it was a great time to make a healthy dessert. I wanted to boost up
Here is the new and improved recipe…
Happy New Year!

In 2011 I graduated with a BS in Nutrition and Health Sciences. All my teachers told me to start working in a clinic or a hospital, but that didn’t sound like me... I wanted to encourage people to eat healthy food!
Problem - healthy food in the eyes of Nutrition is brown rice, steamed broccoli, and baked chicken... sounded boring and unsustainable to me! How was I supposed to get people to eat that all the time?? BORRRING!
Happy FRIDAY 🙌
It’s a double shot kinda morning... I stayed up way too late working... (but it didn’t feel like work) on my new online webinar I’m teaching in two weeks! 👩🏼🏫

For years I didn’t feel like I was enough. I felt I always missing that ‘it’ factor.
I felt I wasn’t worthy of great love, making more money, getting the job I wanted, or capable doing soulful work. Even though I wanted all these things so deeply, there was a part of me that said I wasn’t enough. It wasn’t meant for me. That was for other people...
I felt I wasn’t:
special enough,
lucky enough,
connected enough,
smart enough,
pretty enough,
________ enough.
Most warm days when I get home from work after going to the gym and my 1.2 mile walk in the sunshine from the train I am craving nutrition in the form of a smoothie. Some days fly by and I haven't had many of the supplements and super items I like to include in my diet.
This Super Smoothie I also like to call this the Kitchen Sink Smoothie, because I use A LOT of the pantry items. I made it yesterday after work and when Garrett came home he looked at what I was doing and said "I thought we cleaned the kitchen yesterday?" I was standing in the kitchen surrounded by jars, bags, powders, superfoods, and toppings... all the things!
Confession...
I'm obsessed with this recipe!
It is very similar to the vegan cacao avocado ice cream I like to make, but the chocolate coating makes them even better!
Reasons why I'm OBSESSED:
Simply said, it is indulgent without the guilt. No dairy means no digestive upset, no refined sugar, no processed crap, tons of vitamins and minerals, and full of superfoods!
This recipe helps - burn fat, keep you full, boosts brain and heart health, improves gut health and supports your digestion, also helps with inflammation and joint pain.
Cacao - (cacao powder and cacao nibs) is loaded with antioxidants and nutrients that positively impact your brain and heart health, it helps your body make the most out of other vitamins and minerals, and it boosts your feel good hormones! Here is my favorite brand: https://bit.ly/2yxOMgC
Stress Hack: slow down to be more productive
Yep, you heard that right! It sounds like an oxymoron but it actually works. every. single. time!
Slowing down allows you to have less stress, less overwhelm, and more energy. All of these things help productivity because you will have laser focus on the task at hand, boost your joy and satisfaction in your life.
I’m sure you have had days or weeks that you feel like you are treading water. Jumping from one thing to another, constantly having to reprioritize, feeling like you never did enough?
This is one of my FAVORITE recipes. First off the color alone grabs everyones attention. Then you add in the delicious flavors and the superfoods and it is a show stopper!
I always like to make yummy things even better by adding superfoods and giving it a nutrition boost! Enjoy this recipe with fresh vegetables or add it to a salad for a creamy protein packed addition.
I don't know about you, but here in Austin, TX... Summer has arrived! I paddle boarding with my dad and husband this past Sunday and even with applying sunscreen I got a little sunburn on my back. Here are three natural home remedies I use to help soothe my sunburns!
We have been reaching temperatures in the triple digits and the sun is shining! In case you are like me and got a little too much sun don't worry... I am here to help!
Goals tend to be simple, but unless you really define your goals how do you know if and when you have accomplished them?
For example, if your goal is: to drink more water. What does more mean? I currently drink a lot of water so drinking more would be 10 glasses a day, but for a client of mine who is only drinking 4 glasses of water a day more could mean drinking 5 glasses. Now that is a huge difference!
We all know that recycling is a good thing to do, but many people don’t realize why it’s so important. Many are often blind to how much not recycling adversely affects our environment. By taking baby steps, you are more likely to successfully establish a new (and lasting!) habit. So today we’re going to specifically focus on one item, its effects on the environment, and how you can reduce, reuse, and recycle it. And that one item is...drumroll, please...PLASTIC BAGS!
Why are plastic bags so popular?
According to the EPA, we use over 380 billion plastic bags and wraps yearly in the United States! Plastic has become such a popular item in our culture for many reasons – it is water-resistant, has a long life, is inexpensive, and is incredibly lightweight. Unfortunately, all of these qualities are also what makes it so difficult to dispose of.
Five benefits of being a morning person.
1. Consistent workout routine. As a morning person, you are more likely to stick to a consistent workout routine. It is easy to get distracted by unexpected work demands, social activities, or other engagements later in the day that may get in the way of physical exercise. Extra time in the morning allows for more time to move your body before you officially start your day! In addition, your body and mind tend to be more energized and alert first thing in the morning, making exercise more effective and enjoyable.
In today’s world, the price for flawless skin is quickly growing. From cleansers to serums to at-home face masks, the amount spent by the average New York woman in her lifetime to achieve the fiercely sought-after “youthful glow” is close to $300,000!
But you don’t need to spend a fortune to give your skin some love. There are plenty of ways to support healthy skin from the inside out through diet. Overall, including a variety of fruits, vegetables, and healthy fats, limiting processed foods, and keeping hydrated will support healthy skin.
If you work a 9-to-5 job, chances are much of your day is spent sitting – whether during your commute, at your desk, or in meetings. But recent research has highlighted that long periods of sitting can be bad for your health.
Sitting for much of the day means you’re less physically active and not expending a significant amount of energy or utilizing your muscles, which can lead to a decrease in metabolism. As obesity and obesity-related diseases continue to rise, simply standing more throughout the day may lead to significant changes in overall health.
