I'm obsessed with this recipe!

It is very similar to the vegan cacao avocado ice cream I like to make, but the chocolate coating makes them even better!

Reasons why I'm OBSESSED:

Simply said, it is indulgent without the guilt. No dairy means no digestive upset, no refined sugar, no processed crap, tons of vitamins and minerals, and full of superfoods!

This recipe helps - burn fat, keep you full, boosts brain and heart health, improves gut health and supports your digestion, also helps with inflammation and joint pain.

Cinnamon - is a superhero on your spice shelf! It is probably the most used spice in my house, I add it to everything! Adding it to apples or oatmeal brings out the sweetness without adding sugar or calories!

Avocado -  has more potassium then bananas, is loaded with fiber that helps with weight loss and satiety, the essential fatty Omega-3s help balance your nervous and reproductive system. Making is a great snack snack to help with PMS symptoms during your moon cycle.

VEGAN FUDGESICLE

Yield: makes 10 popsicles

Ingredients:

  • 16 oz. coconut milk (or almond milk to reduce the fat and richness)

  • 1 avocado

  • 2/3 cup cacao powder (not cocoa powder)

  • 1/3 cup maple syrup

  • 3 T. cacao nibs

  • 1/4 tsp. cinnamon

  • 1/2 tsp vanilla paste or vanilla extract

  • 1/2 tsp. Salt

Directions:

  1. Place all ingredients into a Vitamix or high speed blender until smooth.

  2. Pour into popsicle molds (I like these - https://amzn.to/2MHXQ5K )

  3. Freeze overnight, or until solid.

 

Chocolate Coating:

  • 3/4 cup of vegan chocolate

  • 1 T coconut oil

Garnish:

  • Cacao Nibs

  • Maldon Sea Salt

  • Coconut Shreds (optional)

  • Sliced almonds (options)

Directions:

  1. Melt together the coconut oil and vegan chocolate

  2. Dip frozen sickle in half way, while wet sprinkle lightly with cocoa nibs and maldon salt

  3. Allow the chocolate coating to dry slightly then place on wax paper

  4. Continue with the remaining frozen popsicles.

 

 

If you swap the coconut milk for almond milk you can still get plenty of benefits without the extra creaminess and fat content. You can also add protein powder if you want to use this as a post workout treat! The options are endless!
